Things are pretty good over here! I’m getting excited for this weekend. Christmas stuff on Friday (with Chels and Derek!), gorgeous weather on Saturday and yard games and hanging out on (football) Sunday!
Things on the agenda for today:
- Work – Leaving early for a:
- Chiropractor appointment (My shoulders sound and feel like bone is scraping bone and I am constantly rolling my shoulders and crack crack cracking. Think it’s from a combination of not doing the necessary surgery after I broke my collar bone in 2009 and Crossfit over the summer.)
- Going to a trail to run. Need new scenery for motivation!
- Christmas projects + crafts (!!!!)
- Lighting of the Rockefeller Christmas Tree special on TV
- Folding laundry. HATE HATE HATE IT. I’ve seriously been thinking up ways to con hubs into taking over this chore and here’s what I‘ve come up with so far:
- Holding the satellite box power cord hostage on football Sunday
- Hiding the horseshoes
- Boycotting all dinner cooking
- Getting the dogs muddy and have them ready to jump right in his brand new truck
That’s all I’ve got so far…think it will work ![]()
WEDNESDAY
BREAKFAST: Scrambled Avocado Eggs + Grapefruit – 224 calories
Are you tired of seeing this breakfast yet? Good, because I’m not! It’s so darn delicious and satisfying. 3 days in a row means it has to be delicious.
LUNCH: Tofu Salad + Homemade Honey Balsamic – 239 calories
This salad came together in no time thanks to leftover tofu from the night before.
I’m glad it did because there were 12 new employees at the kitchen table doing orientation while I was cooking this. Quite the audience I would say!
- Spring Mix
- Grape Tomatoes
- Dried cranberries
- Nut & seed trail mix
- Leftover tofu
- Homemade honey balsamic dressing
SNACK: Peach Yogurt + PB2 + Pomegranates – 163 calories
Lookin’ a whole lot like yesterday’s snack right?
- Peach dairy free yogurt
- PB2 (I’m out now NOOO!!!)
- Pomegranate seeds
WORK IT OUT
Promised myself 4 miles. Completed 3. Eh, give and take. I just started to get a little creeped out in the dark! You know…monsters and bad guys all that. Judging from my red face, I would say I still got a good run in (I still think I should take pictures of my runs, because anyone who knows me probably wouldn’t believe that I actually run now!). Fast music = fast pace = early burnout. Rookie mistake.
I did catch the prettiest Christmas light display ever! This picture is horrible, but that whole tree is covered solid in the super bright, super colorful LED lights. It was gorgeous! (I actually extended my run just to get that picture. The first time I ran by it was light out and so I whipped out my camera, stopped right in front of their house and got ready for a good shot, looked over and saw the owner and kids looking at me like..”Why are you photographing our house?” Whoops.)
DINNER: Sloppy Josephines + Sweet Potato – 473 calories
This dinner totally made me think of that song, “Jolene, Jolene, Joleeeeeneeee.” No idea why, does it you? Anyway, it was delicious! One of my favorite meals to cook (and eat) when Anthony and I first moved in together was Manwiches (Sloppy Joes, tomatO tomAto). We both loved that sweet, greasy meat piled high on a white bun and would polish off a whole pound of it in one dinner. My diet has changed a little since then, and so I decided to recreate my beloved sandwich.
Boil lentils until soft (5-7 minutes) and drain. Set aside.
Sautee onion and garlic until translucent.
Add tomato paste, barbecue sauce, vinegar, ketchup, oregano, chili powder, S&P and stir to combine. Add cooked lentils, combine and simmer until mixture thickens.
Serve on top of spinach with any sides you like! I chose a tiny sweet potato and corn tortillas. I guess this version is really UN-Sloppy since it’s eaten with a fork!
*HIS* DINNER: Pulled Chicken + Sweet Potato + Salad
Nights like these are a little more challenging when we eat totally different meals. The crockpot did most of the cooking on this one, and I was very grateful!
For the chicken I combined 4 breasts, barbecue sauce, APPLE BUTTER (awesome addition!!), garlic, apple cider vinegar, S&P and cooked on high for 6 hours. Pull apart with 2 forks so you don’t burn YOUR fingers and then immediately take a spoonful to your husband to taste so you burn HIS mouth. Sorry about that hubs. I get a little too excited over food.
**Do you see how much clearer the pictures are of hubs dinner? Only difference – his iPhone 4S vs my iPhone 4. Think I will make him switch me…Now how can I convince him? Hmm.)

I was in a pretty good mood all day and night and this is why!
Wine, cozy pjs, good shows on the DVR, gluten free chocolate cookie (230 calories) for dessert! Heaven.
You probably don’t remember so I will remind you that I bought that cookie to have as dessert after my Girls’ Night dinner at Mellow Mushroom. I just got around to finishing it off! Pretty funny that I bought a gluten free cookie when I NEVER did only to turn gluten free a couple of weeks later. Meant to be, huh?
Speaking of that…I don’t know how much longer it’s going to last. My body feels dead tired when I try to exercise. Need energy!
Somehow this big thing snuck into my lap. She’s NOT supposed to be on the couch, but I didn’t have the heart to tell her to get down. So we just snuggled instead
Gong to have to get the lent roller out now..which reminds me..Kemah got a sticky lent roller stuck to her foot right before bed and totally freaked her out. I think she thought she was being attacked. Ha!
Lots of DVR watchin’ including American Horror Story, The Voice, The Challenge, & New Girl. Anyone catch New Girl this week? Hilarious! Wow. I need to watch less tv.

Those sloppy josephines look and sound delicious! I am definitely going to have to give those a try.
Oh, and I added avocado to my scrambled egg whites this morning (and some salsa) …oh, so delicious!
