Anyone super excited that tomorrow is Friday? Traveling takes it out of me, and I feel like I have lots to catch up on in the office and at home. Hoping for a productive AND relaxing weekend. Still working on how I can work that out…
So yesterday I never got the chance to check in with your guys. Our day started bright and early at 7:30 am, and between riding in a vehicle for 8 hours, working for several hours in a conference room, and the super foggy and gloomy weather, I was wiped when I got home at 8pm. Honestly, there wasn’t much to share anyway! Boring continental breakfast, fast food & notsoscenic pictures of Northern Oklahoma. Boooooring to share!
When I finally did get home I spent the rest of my night catching up on The Bachelor. Saun is my favorite Bachelor to date, and besides Tiera, he’s got such a cute group of girls! I’m totally addicted to this season.
BREAKFAST: “Sausage” & Egg White Breakfast Sandwich – 212 calories
I’m back in my normal routine today! Simple (mile high) breakfast sandwich to kick off my day. This protein packed sandwich kept me full for hours, no problem. A combination of protein, carbs, & healthy fats always does the trick.
- English muffin (I’ve been out of school too long – I just typed “muffun” haha)
- Morningstar “sausage” patty
- 1 Organic egg white
- 1/2 T No sugar added preserves
LUNCH: Sweet Potato, Black Beans & Simple Salad – 300 calories
Last night I was NOT in the mood to pack anything elaborate for today’s midday meal, so I went with something totally easy. I threw a sweet potato, a can of black beans, and a bag of spring mix into my lunch box and crossed my fingers it would turn into something edible. It definitely did!
Pretty tasty to be so random! Sometimes laziness DOES pay off
- Sweet potato, baked
- 1/2 C Black beans, seasoned with cinnamon, chili powder, S&P
- Spring Mix with a balsamic vinegar drizzle
After 2 days off from working out, I am more than ready to get sweaty tonight!
