Falafels + Mediterranean Yogurt Dip

This morning I reallllly wanted to get my workout in before work. I’m leaving town again tomorrow for a work trip and knew it would be nice to get my sweat session out of the way so I have extra time to pack and get things together tonight.
For the last month or so, the hubby has been going into work at 2:30 am (and getting home after 6pm!). Thankfully today is the last day of that, but after he left this morning I could NOT go back to sleep for the life of me. I laid there until about 4:30 when I finally drifted off. An hour later at 5:30, I decided there was no way I would get a good workout in and slept in instead. Sheesh. I’m pretty sure it was the red wine I had while watching The Bachelor. Does it disrupt anyone else’s sleep, or am I just weird? At least I know I will sleep good tonight!
BREAKFAST – Waffles + PB & Banana – 250 calories
Waffles are back! I just adore them.
Especially Van’s natural, whole wheat cinnamon waffles. Can’t beat em!
- 2 Van’s Light waffles
- 1/2 Banana, sliced
- 1 T Natural PB
- 2 T Sugar free syrup
LUNCH: Falafels + Pita & Mediterranean Yogurt Dip – 295 calories
About 2 years ago, I took a trip to Seattle for work, and we ate at this delicious little hole in the wall Mediterranean restaurant. Ever since then, I’ve been in love with falafel, but sadly, have never had them again! I decided over the weekend it was time to change that and prepped a bunch to freeze for lunches.
SO good!! They taste like something that Ican’t quite put my finger on… Either way, they’re totally delicious. I served 2 falafel patties open faced on a whole wheat pita with romaine, grape tomates & a Mediterranean inspired sauce.
Falafels
Makes 6, 88 calorie patties
- 1/4 C Oatmeal, ground into a flour
- 1 Can garbanzo beans
- 3 T Cilantro
- Juice from 1/2 of a lemon
- 1 Organic egg
- 2 t Minced garlic
- Salt & paprika to taste
Grind oats in food processor until a powder forms. Add the rest of the ingredients and pulse until a thick mixture forms.
Heat a skillet to medium with olive oil spray. Cook patties until starting to brown, flipping halfway through. Enjoy!
Top it off with the good stuff!
Mediterranean Yogurt Dip
- 1 T Plain Greek yogurt
- 1 T Hummus
- 1 t Lemon juice

I LOVE falafel and that Mediterranean yogurt dip sounds fabulous. I will most definitely be trying that!

I always wake up in the middle of the night and can’t get back to sleep when I drink like 2-3 glasses of wine! It’s the WORST feeling! Ps I just recently found your blog – it’s great! You are hysterical and you apparently live pretty close to where my boyfriend grew up (only know that because of how close you live to that casino you went to for v-day not bc I’m a stalker….). We live in Ohio now so I’m SOO jealous of your weather!!
