Hey hey hey!
How is everyone’s Tuesday morning so far? I think I felt a little bit of a chill in the air this morning…hopefully a sign that it might eventually stop feeling like Spring around here!
Did anyone catch Blake Shelton’s Christmas special last night? I missed it!! I realized at 10pm and I was so sad. I’ve been looking forward to it for forever now. Any of my friends that might have recorded it better invite me over, ok?
One more order of business to take care of. Sunday’s post was full of pictures, but wordless per usual, so I wanted to point out that the noodles I had for dinner were obviously wheat noodles. I followed the Wheat Belly book’s instruction to avoid wheat for 1 week and not a single one of the amazing things he promised would happen happened. So back to normal for me! I do know some people that have had success with it, but that just goes to show that everyone is so different and different diets ways of eating will affect them differently.
Oh, Monday. It was everything I expected it to be…and I don’t mean that in a good way. ha!
BREAKFAST: French Toast Sticks + Clementine – 305 calories
If you are sick of seeing this breakfast, let me assure you that this was the last of my Van’s french toast. I can’t promise I won’t be re-stocking up verrrrry soon though. Gosh these are good. Expecially topped with my homemade sunflower seed butter. If you are a sunbutter fan, try this and make your own! It was $1.99 versus $6.99 for the store bought brand I normally purchase. Plus, when you make your own you can add in all sorts of fun mix ins like cinnamon, vanilla, pumpkin spice, cocoa powder, …!
- 2 Van’s gluten & dairy free french toast sticks
- Homemade Sunflower Butter
- Sugar free syrup – this artificial junk is so bad for me. I promise I won’t buy more!
LUNCH: Mediterranean Veggie Sandwich – 378 calories
After a couple of hours of work, I hopped in my car and headed to Dallas to take care of some work-related errands downtown. I grabbed lunch on the way at Potbelly because what I had originally packed (soup) would have been pretty hard to eat on the highway!
So glad Potbelly came to my area! It’s my absolute favorite place. Eaten in the car while enjoying my view and hating the traffic!
SNACK: Iced Soy Latte – 150 calories
Betcha didn’t see this one coming….
I mean..I never ever go to Starbucks and take pictures of myself with my favorite iced soy latte, do I?
Not so sure a venti latte was the smartest decision. It was tortuuuuuree to be stuck in a car for 3 hours alone all jacked up on caffeine. I danced and sang to Jingle Bells and Frosty the Snowman there and back and when someone would look over and give me a funny look I would just hold up my Starbucks like, “What? You’ve never drank too much caffeine before?”
DINNER: Creamy Avocado Sauce Pasta + Sausage + Salad – 381 calories
This is my favorite sauce in the whole entire world. When I was vegan for 2.5 years I was always looking for a good substitute for anything cheesy and creamy, and this was my go to to satisfy both cravings. It tastes anything but healthy, but it definitely is!
Combine all ingredients in a food processor, have your husband break the lid while trying to help, take it back and fix it, then whirl it all around until creamy. So simple, so good.
For 2 servings
- 1 Avocado, very ripe
- 1/2 T Olive oil
- 1 T Almond milk (or just enough to get things moving)
- 1 t Basil (tiny handful of fresh if you have it!)
- 1/2 T Minced garlic
- Juice of 1/2 lemon
- S&P to taste
- Don’t heat. Mix with very warm pasta or squash or serve over warm meat or tofu. It tends to get a little clumpy when reheated.
I served mine with spaghetti squash pasta and topped with 1/2 of a vegan Field Roast sausage and a side salad.
I’ll be honest and say that I altered my original perfect recipe (which is what I posted above) because I was out of lemon juice. I also was trying to measure everything (spices, vinegar, etc), whereas I normally just eyeball it. This batch didn’t turn out very good! Whatever you do…do not replace the tiny bit of lemon juice with 2 T of apple cider vinegar. It was a long day..don’t judge
Hubs creamy sauce was served over whole wheat pasta (the best way to serve it!) with honey mustard tilapia.
For the tilapa, I placed 2 frozen filets in a greased casserole dish and topped them with Annie’s natural honey mustard, garlic salt, & pepper and baked at 450* until they flaked with a fork.

In August, I found this pillow that matched my new set of hurricane vases so perfectly and I decided I had to have it. The only one left in the store was coming apart at the seams and stuffing was falling out. I really wanted it, so I asked for 20% off and decided I would just sew it back together. Finally got around to doing that!
Good as new!
A little bit after dinner I started feeling really sick. I have an almond sensitivity and I felt like I do after I eat almonds. I am wondering if I am sensitive or allergic to avocados as well? Hm..all I know is that I felt like crap. Thankfully our 24 Days of Togetherness activity for the day was “Give each other a foot massage.” (Someone wore his candy cane pjs to celebrate the Christmas activity)
The rest of my night was spent reading in bed (I finally started the 2nd book in the Crossfire series!)
and begging hubby to bring me things like water and the dogs.
