70* in January + Tofu Noodle Muffin

On the drive to work this morning, they were debating Beyonce’s lip-sync of the national anthem at the presidential inauguration. Most people agreed that she should have just sang it…which I can agree with! I mean, they chose her because she has an incredible voice. She wasn’t dancing around and needing a little extra help vocally, so I think it shouldn’t have been a problem. It IS the national anthem afterall… I don’t recall ever seeing anyone lip-sync it. Thoughts?
BREAKFAST: Tofu Scramble + English Muffin – 221 calories
The very last of my tofu scramble! It’s good, but after 3 days of the same breakfast, I’m ready for something different tomorrow.
LUNCH: Lightened Up Potato Soup – 264 calories
Y’all, it is seriously SO pretty outside. 70* and sunny! I feel even guilty saying that since I keep reading how cold it is up North. Usually I take my lunch breaks at my desk and either just work through it or blog, but it was just WAY too pretty outside to not be out in it. Instead I drove and parked under a tree and enjoyed my soup in the sun with the windows down while reading my new book.
Was a nice little lunch!
SNACK: Shirataki Muffin + HB Egg – 120 calories
When I arrived at work this morning and walked into the kitchen, everyone was gathered around a container of muffins on the table. My boss said, “I made those muffins and you have to try them!” Everyone was giving me a weird look, so I knew something was up. It only took me about 30 seconds to realize that everyone else thought they were disgusting, but I know my taste buds are not like anyone else’s (aka I will eat anything and think it was the best think I’ve ever eaten in my whole entire life.) After taking a bite, I declared that they were really good! They have kind of been the joke of the office today, but I liked ‘em!! They are only 50 calories each too!
The ingredient list does look a little scary if you ask me though ![]()
- 2 bags yam noodles (Shirataki or Miracle noodle traditional Zero calorie 8oz bags)
- 5 tbsps peanut powder (PB2 45 CALORIES in 2 Tablespoons)
- 3 egg whites ()
- 2 tbsps stevia (C&H Stevia/sugar blend)
- 1 tsp baking powder ()
- 0.5 tsps vanilla extract ()
- 1 dash salt (or 2 dashes to your taste-)
- 1 bag dark chocolate (Chips- you will need 24 chips of your choice.)
Really, the only thing off about them was the texture. The recipe calls for you to cook tofu noodles and then use a food processor to turn them into a “gel”. This resulted in the texture to be kind of like … a bunch of tiny maggots or something…for lack of a more appetizing description. I think if you used silken tofu or blended the noodles while they were still soft and not cooked, you would come out with a better texture.
They may not be for everyone, but if it’s got melted dark chocolate on it, you can betcha I’m going to like it! ![]()

You are so lucky to be experiencing 70 degree weather. It is definitely very frigid up here in the Midwest :/. I must say, those muffins look and sound interesting…but I’d definitely try them!
