Woohoo for the weekend. So glad it’s here. What a week…
Remember how I went to the chiropractor yesterday? I have always heard that chiropractors were a big scam but I was to the point where I would try anything, so off I went! Here is the verdict
- Scoliosis (Um, what? I’ve been tested visually by doctors my whole life and never been told that.)
- Right leg is 3/4” shorter (Except I was laying down all crooked when he measured me)
- Spine in neck is straight, not curved, so it should cause me headaches (A generic diagnosis if you ask me – headaches are pretty common. Like a fortune cookie saying good things are in your future.)
- The creakiness in my shoulders is in fact horrible, but is only from stress. (Hmm)
So, I am not sure I buy everything he told me. One thing I do know is that is felt GOOD. Regardless of it is actually doing anything, I think I will go back. Popping all of those bones in my back really did release some pressure and it felt amazing. Not to mention the hot, massaging water bed you get to relax in at the end. Ahhhh.
I loved Thursday!! It is amazing how much difference 1 hour can make. I left work a little early for my appointment and wrapped that up around 4pm which got me home about 1.5 hours early.
BREAKFAST: Baked Apple Oats – 239 calories (Vegan and gluten free)
Wednesday night I threw a foil pack of baked apples in the over with some cinnamon and spray olive oil. For breakfast I added the apple chunks to the top of my oats and it was delish! So comforting and warm.
- 1/3 C Oats
- 1/3 C Almond milk
- 1 t Chia seeds
- 1/3 Banana mashed
- 1/2 Baked apple + sugar free fyrup
LUNCH: Egg Salad – 271 calories
This lunch was so tasty, but so stinky. I hate eating eggs at the office, but thankfully I didn’t get any sideways stares over this salad
Served with a clementine! So good this time of year.
- 1 Organic egg + 2 whites
- 1 T miracle whip light, 1 T mustard, 1 T relish
- Spring mix, carrots, grape tomatoes
- Dried cranberries + seeds & nuts trail mix
2:30 came SO FAST and I was outta there! I’ve heard a lot of people say they are scared or nervous of the chiropractor, but I was oddly excited. Of course on my way out I had to stop and grab a Starbucks snack. And snap a picture to prove it Notice my window being down..on November 29? I. love. Texas.
WORK IT OUT
Straight from the chiro office, I headed home to change clothes and drive across town to a trail I used to run all the time near our old house. It was gorgeous outside so I got to run in a tank
and shorts! I ran 1 mile down the trail and veered off to run 2 miles around the historic district. (I think I should rename the blog: selfpicsofashleerunninganddrinkingstarbucks.com)
There were several people putting up lights and luminaries and it definitely put me in the holiday spirit. After my 2 miles on the streets, I headed back to the trail to finish my last mile. This black cat ran across the trail and scared the OMG out of me. Literally screamed “OMG!”
Isn’t it weird how some runs are so hard and mediocre (see Wednesday’s post) and some seem so easy and effortless? This was the funnest, easiest 4.12 miles I’ve ever run. I think a change of scenery and some nice weather was all I needed to pull me out of my running funk! Can't wait to run that route again.
*HER* DINNER: Chorizo Tacos + Homemade Refried Black Beans – 392 calories (Vegan and gluten free)
Simple, easy, fast!
After my run, I swung by Tom Thumb to pick up some gluten free items, mainly protein sources, and nabbed this pack of Soyrizo. I didn’t have high hopes, but gosh it was good!! I can’t wait to eat it again.
- Chorizo style soy crumbles
- Shells, romaine, tomatoes, salsa
- Homemade Refried Black Beans
*HIS* DINNER: Lemon Pepper Chicken, Creamy Rice + Salad
Another night of opposite dinners. At least they were both easy.
I just reheated a leftover chicken breast and added some brown rice cooked in almond milk with garlic hummus, paprika, salt & pepper. Oh, and a salad on the side.
And then while hubs was at the gym, I decided to tackle the ginormous mound of laundry I needed to fold. I told you yesterday that I wanted to con hubs into doing the laundry, but then I remembered….he used to do ALL of the laundry while I was in college and I made him stop after I graduated and had more time. Oops. Anyway, my laundry folding was complicated when someone decided my shirts made a nice bed
and someone decided he wanted to keep resting his pitiful little head on my shoulder until I broke down and played with him. Silly dogs.
Fun filled Christmas night!! I have been dying to do some Christmas projects, and Thursday was the night! After a quick trip to Walmart for supplies, we set up shop and got to work. Red wine is a necessity. Beer for him!
Snack included 2 (small) slices of Udi's gluten free bread with homemade sunbutter, apple butter and an uneaten clementine.
Oh yeah, that reminds me! I made homemade Sunflower Seed Butter Thursday night after dinner. It’s so much better than regular old peanut butter. Mmm. (And now that I’ve lost those 7 lbs I wanted to lose, I can switch back from PB2 to the full fat stuff!) This method works for any nut or seed. Just throw it in the food processor with a few grinds of sea salt and whirl away! Easy peasy!
Stored in a redneck champagne glass that we toasted with at our wedding because the rest of my jars are full of bulk bin grains!
Ok, back to the Christmas projects. First up, handmade Christmas ornaments to help remember our first holiday season as a married couple. Hubs decided we should put pictures inside from now and the beginning and make them time capsule ornaments. Good idea, hubby! I took care of the present,
and he took care of the beginning!
I love them because I know we will look back on them in 20 years and have a great memory of that night!
2nd project was an idea I got from Tina at Carrot’s n Cake. 24 Days of Togetherness is such a cute idea! Just jot down 24 different holiday themed activities to do as a couple each day in December. Draw 1 each day. We used most of her ideas and threw in a few of our own.
Here’s what we came up with:
- Enjoy a Starbucks holiday beverage
- Play pitch
- Go window shopping
- Share 3 things you love about one another
- Go for a nature walk
- Wear red and green to the gym or on a run
- Have a fire
- Wrap presents and drink wine
- Buy stocking stuffers for the dogs’ stockings
- Make s’mores
- Cook a 4 course meal together and eat at home
- Drink eggnog
- Drink hot cocoa
- Walk the dogs and look at lights
- Go out of town for dinner
- Take a family photo
- Sing and dance to Christmas songs
- Give each other a foot massage
- Make Christmas cookies
- Buy a Christmas ornament
- Go out for a cocktail
- Buy each other a small gift
- Take a drive, listen to Christmas music and look at lights
- Watch a Christmas movie
Sounds fun, right? Now they’re all tucked away just waiting to be drawn! I can’t wait for Saturday to pick our first one
